Classic, accessible Irish caves.

Here are my favourites:
Clare:
Coolagh River (Probably the best typical Clare cave trip)
Pollnagollum (Haven't heard about any Poll Elva access problems, great for long cross over trips)
Fergus River (VERY weather dependent)
Doolin River - St Catherines to Fisherstreet pot
Faunarooska (For fun!)
Balliny (If you like pain but the end of it is almost worth it)

Fermanagh/Cavan:
Noones Hole (Great trip especially the long trip to the Arch streamway)
Tullyhona (If you can fit in the entrance, also weather dependent)
Marble Arch
Prod's Pot
Cascades (Wet trip and great fun)

I haven't been in Shannon yet so can't comment but from the photos and stories coming from it, it sounds like a great trip. I mostly cave in a furry in Ireland but some of the caves need wetsuits.

There are some great trips in Fermanagh, unfortunately the vast majority are weather dependent (even if they don't require wetsuits). Prod's, Shannon (best to head down with a Shannon Grouper) and Marble Arch (if not saturated) are the common ones in this case. If the weather's dry, there are excellent sporting trips in Cascades (wetsuit optional), Tullyhona (wetsuit), Poulnagollum of the Boats (wetsuit), Noon's-Arch 2 (for a good long trip with SRT) and plenty others. Pollbwee-Monastir Cliff-Bruce's Pot is a great through-trip with some SRT.

If you're interested in coming over to this part of the world I highly recommend getting a copy of the Caves of Fermanagh and Cavan (Jones, Burns, Fogg, Kelly); it's still the definitive guide for the area.

Dunno about classic and accessible, but all the caves in the republic are listed in the Irish Caves Database (much like the UK's cave registries) which can be found and interrogated here.
