Here are my favourites:
Clare:
Coolagh River (Probably the best typical Clare cave trip)
Pollnagollum (Haven't heard about any Poll Elva access problems, great for long cross over trips)
Fergus River (VERY weather dependent)
Doolin River - St Catherines to Fisherstreet pot
Faunarooska (For fun!)
Balliny (If you like pain but the end of it is almost worth it)
Fermanagh/Cavan:
Noones Hole (Great trip especially the long trip to the Arch streamway)
Tullyhona (If you can fit in the entrance, also weather dependent)
Marble Arch
Prod's Pot
Cascades (Wet trip and great fun)
I haven't been in Shannon yet so can't comment but from the photos and stories coming from it, it sounds like a great trip. I mostly cave in a furry in Ireland but some of the caves need wetsuits.
