Not long ago I set principles aside and learned how to make a vegan "omlette", using gram flour.
It's laughably easy and actually really nice. Slapped between two bread door steps with a load of tomato sauce on, it'll keep you full for hours. (Best treated as a Spanish type omlette with assorted chopped veg in.)
Might try onion bhajis next - doesn't sound too difficult.
