Grab shot? Phones win hands down these days, convinient and usually half-decent quality.
Permanent record shot? Anything half-decent and robust, Fuji do (did?) some decent bridge camera's with manual controls.
Arty/competition stuff? Whatever you fancy. I use a Sony NEX3 and some old manual glass with appropriate adaptors (50/1.4 on PK or a 24/2.8 Hoya on M42). I've used Canon EOS in the past. They both work, as would Nikon or other alternativ, but one is considerably smaller and lighter.

I wouldn't take a Leica underground - Most are worth more than my bikes. Same with any half-decent AF DSLR lens.
